Our philosophy

Coffee, food, and rooms designed to slow you down.

We started Daybreak because most mornings felt like a transaction. A drive-through, a paper cup, twelve minutes later you couldn't tell us what you drank. We wanted the opposite of that.

So we built three café spaces full of plants and natural light, found farmers we could call by name, and built a menu around what's growing this week. The result is a slower café, and on most mornings, a quieter mind.

Plant-forward

A menu that's vegetable-first by default. Meat exists, but it's optional. Most of what we make happens to be vegan or vegetarian without making a thing about it.

Direct trade

Fourteen farms we visit in person. We pay double commodity for our green coffee, every year, every harvest. That's the only sourcing standard we trust.

Roasted to order

Beans are roasted Monday and Thursday on a 1955 Probat and shipped within 24 hours. Never more than a week old by the time they reach your kitchen.
